Talent to watch: Thomas Pesquet

Astronaut Thomas Pesquet is back

Thomas Pesquet is the most famous French astronaut and the first to become commander of the International Space Station (ISS). Originally from Rouen in Normandy, he has held various positions in the aerospace industry and is also an airline pilot. He went on his first mission to space in 2016 to conduct studies and during this stay on the international station, he performed two spacewalks. However, he is also esteemed by the public for the photos he shares with the world. On April 23, 2021, he embarked on a second mission in space named Alpha.

"Gastronaut" Pesquet

Each astronaut on the space mission can take "festive meals" to share with all the other crew members. Thomas Pesquet has called on the talents of François Adamski, Corporate Chef of the Servair Group (airline catering) and chef of the French Bocuse D'Or team. Chef Adamski was born in the Hauts-de-France region and has won numerous awards, including the Bocuse d'Or in 2001 and the title of Meilleur Ouvrier de France (2007), not to forget Michelin stars twice in career.

A starred French recipe kept fresh

Throughout the development process, François Adamski and the French astronaut worked hand in hand to build a menu that honors French cuisine while echoing Thomas Pesquet's childhood memories and favorite dishes.

Among the ten dishes proposed by the Chef, the astronaut chose :

  • Crunchy and creamy small spelt, caramelized celery and Périgord truffle

  • Beef bourguignon, smoked farm breast, mushrooms and glazed onions

  • Crepes flambéed with Grand Marnier and orange zest, Suzette style

To ensure that the taste qualities are maintained while guaranteeing a very long shelf life at room temperature, Servair's engineers, in conjunction with the CTCPA (Centre Technique de la Conservation des Produits Agricoles), have chosen a state-of-the-art technology: sterilization in flexible bags.
