Michelin awards green stars to promote sustainable gastronomy in France

The Michelin Guide France unveiled the 2021 list of starred restaurants in France. 638 restaurants were awarded stars, among which 33 chefs that demonstrate a true commitment to a more sustainable planet.

Created in 2020, the green star highlights short circuits, permaculture vegetable gardens, composting, respect for the earth, producers and also animals and use of seasonal ingredients. The establishments rewarded with the MICHELIN green star, compete in ingenuity to reduce their ecological footprint. Here is the list:
