Enthusiast since childhood by wine, Emmanuel Poirmeur becomes agronomist and oenologist. After his studies, he went to Argentina to develop a wine analysis machine. There, he also works on sparkling wines made in vats. In 2007, he returned to the Basque Country with the idea of doing the same thing again, but under the sea!
This is how he creates a range of wines made under the ocean. The fermentations are carried out in vats in the bay of Saint-Jean-de-Luz, at 15m depth. This pioneering and extraordinary winemaking method reveals aromas that would not develop otherwise than by this underwater process.
